The four roles

Read it as two pairs. Owner and Admin are company-wide — they see every job, present and future, with no per-job setup. Editor and Observer are per-job — they only ever see the jobs you tick for them.
Good to know. The summaries in the table are the exact lines the product shows next to each level when you invite someone, so the invite form and this article always agree. The split between "manage the company" and "work on a job" is the whole model — pick the smallest box that still lets the person do their job.
